If there is such a thing as comfort food in the summer time then for me this is it.  You can serve this yummy crumbly mixture on a variety of dishes to spice them up.  We have such an abundance of fresh vegetables in our garden so this week we had it with fresh steamed beans, grilled zucchini and my home made pasta.

  • 2 slices of white bread
  • 3 garlic cloves
  • 1 chilli (or more if you like it hot)
  • Salt and pepper to taste
  • 2 tbl olive oil
  1. Put the bread, garlic, chilli, salt and pepper in the food processor and mix until it become fine crumbs
  2. Heat oil in frying pan.  Add bread mixture and lightly fry until golden brown.  Be careful not to burn it
  3. Add to your favourite vegetables or on top of your pasta
